This week we are excited to announce that we are highlighting Pete’s Greens from Vermont’s Northeast Kingdom.
Pete’s Greens is a Vermont institution. Located in the Craftsbury, they are one of the largest certified organic farms in the state. They also have one of the largest CSA memberships of any farm around. They are a diversified farm offering a variety of vegetables and meats. Recently they have purchased an adjacent farm and started raising all natural pork. After a devastating barn fire destroyed the original barn on their property the community joined to help Pete rebuild better than ever. Touched by such generosity Pete took some of the money raised for his farm and started The Vermont Farm Fund which farmers and food producers can use to get long term low interest loans when they are in times of need.
We are using pork bellies and root veggies from Pete’s Greens in this week’s farm share plate. Feel free to ask your Juniper server for more details or call us directly at 802.651.5027.
Juniper is excited to offer a weekly changing Farm Plate Special featuring different Vermont farms and will be available seven days a week for our guests to enjoy. Farm Plates can be purchased a la carte in the restaurant or with a pre-purchased packet of six vouchers from our online store.
This program will benefit our farm partners by providing another outlet for them to sell more of their great products, and allowing us to help them through the purchase of whole animals and larger quantities of vegetables. Each dish will have a story unique to the farm and the cook who creates it, drawing influence from the diverse cultural backgrounds of our chefs. Dishes from around the world will be efeatured, for example a meatloaf and mashed potatoes with Brussels sprouts, or lamb sausage with red wine braised cabbage, maybe even grilled alpaca with chimichuri.
Our first featured farm is Templeton Farm! We will be making a grass-fed meatloaf with mashed potatoes and a cauliflower gratin that will be available at Juniper for the week starting tomorrow.
Templeton Farm is owned and operated by the Chapell family in East Montpelier, Vermont. We have worked closely with the family since we opened in spring 2013 and hope to continue to do so for many years to come. They offer the highest quality 100% grass fed and finished beef as well as award (2014 Vermont Maple Festival Best Dark Amber) winning maple syrup.
Their website states:
“The original members of our family came to America on the Mayflower in 1620. The Templeton family were one of the 3 founding families in the town of East Montpelier moving from Peterboro, New Hampshire in 1788. The farm as it is known today was settled by John Templeton Jr. in 1810 and is 150 acres in size. To put that date into perspective, Thomas Jefferson was serving as our President during that period of time. In 2010 Templeton Farm became a bicentennial farm which has been in continuous family ownership for 200 years. For 8 generations Templeton Farm has been producing bountiful forage, grain, apple, maple and timber crops along with dairy, beef and sheep. Our Angus and Hereford cattle feed on lush green pastures on our farm in East Montpelier Vermont. These animals are raised in a natural low-stress environment, are completely hormone free, resulting in a natural beef product that is exceptionally tender and loaded with flavor.”
Come in and try it out! We will be releasing the dish of the week on our social media outlets, so stay tuned!
